For myself I prefer 3 to 4 inch blades for deer size game.The knife second from the bottom on picture above and my Buck 102 (not in picture) are the knives I have used most for hunting.
 The rest are used primarily on moose, when we are field dressing and quartering to pack out

I started my antelope this year with my War Dog. Didn't have a chance to take any pics though because I kinda rushed through it. I thought it would work great but it was just too big so I ended up transitioning to one of my Schrade Sharp Fingers and using it instead. Smaller knives just handle better for me. I would like a Scrap Muk but since they are so hard to come by I ended up buying a nice skinner from a knife maker on bladeforums that is somewhat similar to a Muk. Hopefully next year I draw a deer tag and I can give it a go. Or I might just put it to use on some coyotes this winter. The other WD,  as in Wiener Dog worked great for me last year for field dressing a couple whitetails. I used it and a 4" HCLE to skin and bone em out also. AndrewS, you might consider the Rodent Solution on sale over at Swamp Rat Knives.  It's got a blade size perfect for small whitetails.  I'd also check out the Hairy Carry and/or the Vex.  You can sometimes pick 'em up on the secondary market for reasonable prices.  The RS is SR101, the HC is 154CM, and the Vex is D2.
 The Yard Muk is a well designed blade.  I've used it to butcher two deer.  I like the feel--although a bit thinner would be nice for this blade--and the sweep of the blade that still provides a useable tip is fantastic.  It "dulled" MUCH faster than the SR101, but not horribly--I gave it a few swipes on a ceramic rod after 1 and a half deer and it was shaving sharp again.
 
 The HC is next in the hopper for deer duty.  It has a MUCH more useable choil than the RS and is just a SLIGHT bit shorter than the RS.  I am really looking forward to that one.  I see that as being a heckuva deer blade.  I'm sure it would work great on antelope as well <img src="/ubbthreads/images/graemlins/wink.gif" alt="" />
I did consider an RS for a while but I thought it would be too close in use as my Scrapivore so I passed. I didn't realize they were still available though so I might have to pick one up. My 02. The Muk and the Bird Dog combo.Heavy work with the Muk.
 Skin with the Bird Dog.

Yessir it is.  
 Step 1:
 Hang by the neck and cut the bottom part of the limbs off with a sawzall (or cut around the joint with a sharp knife if you're proficient.
 
 Step 2:
 Cut under the skin from the tip of the limbs up to join the incision you made to field dress it.
 
 Step 3:
 cut the skin around the neck, and in the front, cut the hide from the bottom of the field dressing cut up to the neck incision.
 
 Step 4:
 Peel the hide down about 6 inches or so.
 
 Step 5:
 Put a golf ball under the hide in the back and tie a rope completely around the hide-enclosed ball.
 
 Step 6:
 Tie the other end of the rope to your trailer hitch or rear bumper and SLOWLY drive away.  The hide will peel off like a banana.  Very little flesh comes off with the hide this way and it saves A LOT of wear and tear on the hands.  Takes roughly the same amount of time as doing it the old fashioned way too <img src="/ubbthreads/images/graemlins/wink.gif" alt="" />

I've seen a deer cleaned with a winch before years ago, and they MAY have used a baseball instead of a golf ball. I had forgotten all about that, it was probably 20 years ago or better.
