MB, when I was in Idaho a lady gave us a 5 pound Moose roast, told us to cook it in cream of mushroom soup at a low temp. IT WAS GOOD, tender too!

I love me some deer tenderloin. I'd expect elk tenderloin to be similar, but I've never had elk or moose.

Elk is great. Mule deer is good. Whitetail is hit or miss for me.

I like Whitetail tenderloin but some of the roast I have had was not the best.
