Just successfully finished 2 knifes on the wicked edge. It was expensive, but a splurge that I had calculated. So you got it figured out? What were you doing wrong? Angle, and in all the excitement of getting it I was using it in low light. Got the loupe out to inspect the scratches.

It's all (mainly) about culture. We eat beef here like there is no tomorrow. In India (at least certain sects), cattle are a sacred animal and is not even made to move out of the road.
Some places eat cat, dog, horse and snake as an everyday fare. Cultural.
