Lately there has been a few posts with fungi and mushrooms.

Well I enjoy collecting fungi and making a good meal of them.
So this sunday I went to the woods with a friend of mine to see what we could find.
We did find a lot of really good ones. Needless to say, we know what we are doing, and go go by the rule: Any doubt if it is edible, discard it.

Some pics of our harvest:

Indigo boletus. Fantastic flavour roasted with butter and on a piece of bread.

Lark boletus. Ok, taste, but works more as content in a stew.

Chanterelles. Also really good!

Had taken Monsterdogs brother along

Gill Fungi. I don't know the excact name in English, just that it is a sort of Gill Fungi.
Very nice flavour. Much like hazelnuts.

The whole harvest:

I forgot to take pics of the food, but it came out great!

WARNING: ONLY DO THIS IF YOU KNOW WHAT YOU ARE DOING, AND ALWAYS BE TWO, AND HAVE TWO OPINIONS IF THE FUNGI IS EDIBLE OR NOT!!! A GOOD PIECE OF ADVICE IS TO BRING TWO DIFFERENT BOOKS ON FUNGI!

Nice variety of mushrooms you found. Do you live in the country?

Thanks!
No actually I live in the Danish capital, so I have to go some 20 miles outside the city...

Awesome trip! I really want to learn how to ID edible mushrooms and other plants.

I know a lot of mushrooms around the midwest are edible but a lot aren't. Most people only around me eat morales and leave the rest.

I think I want a fungus book and Rasmus along when I next go to the woods. I love sauteed mushrooms!

Well, I can highly recommend it! So get yourself a couple of books. It doesn't have to cost a fortune.
And remember, a trip to the woods collecting fungi, is always a good excuse to bring the knives.

No No No. I must wait a week or two so I can spend money at the Busse Combat table this Friday at the Indy 1500 gun and knife show.

I can always buy books later .

Nice harvest there, Rasmus! How did you prepare them?

I used to pick several big bags of huge "Boletus Edulis" mushrooms in grassy areas of the city I lived in Denmark every fall. Those things are delicious Used to basically just fry them with salt/pepper and add cream and thicken the whole thing.

Information for non-Danes: "Boletus Edulus" mushrooms are easy to spot (sponge like underside instead of gills, distinct brown and beige coloring) and can practically only be mistaken for two other mushrooms in Denmark, one is also delicious, and the last one isn't poisonous, just tastes really awful.

Rasmus is obviously much more advanced, I would not have dared to pick and eat half of those!

Thanks!

The Boletus Edulus is a great mushroom for eating, and you can't go wrong with that one.

We fried the whole lot on a pan with butter, salt and pepper, and then put them on bread. Then a little oliveoil on top, and some fresh rosemary.
Actually we did save some chanterelles for a creambased sauce, much like Monsterdog describes, to put on our roast.
