I stripped the coating on my 711 and underneath there's a rippled texture on the main bevel. The flats don't have it, just the main bevel. What causes that and does anyone know of an easy way to get rid of it without power tools? I've been sanding...and sanding...and sanding...

It's part of the machining process.

Yep either surface grind or mill lines.

Make sure you use the right sandpaper. I wouldn't go below 120 grit on steel, and use a sanding block of some sort, trust me it makes a big difference.
Get yourself some beers, a movie or a few to watch and get on sanding

Or just keep 'em and save your energy for other things...like buying more knives
