Tried to cook a neck roast today. Epic fail. I forgot: High temp, add liquid, wrap in bacon and cover. I did low temp, no liquid, wrap in bacon and cover. Left it dry and stringy, not moist and falling off the bone

Yeah, they brought it back in 2005 and has been going strong since. They are bringing on the fourth regeneration (of the recent series) starting in December.

Ended up making bratwurst instead. Those were tasty. Still. Disappointed over the neck--a heckuva a large chunk of meat going to waste...not to mention all the bacon!

Can't you do anything to save the meat? Like maybe getting it off the bone and then smothering it in gravy for a long slow low heat cook?
