Actually it was a fairly good sized onion so we only used half. Plenty of onion as we also used 6 small green onions chopped up as well.

Onions and I don't get along, and the gas it produces is LETHAL! LOL

EGGROLL IN A BOWL


1lb Pork Sausage
1 14oz bag of Cole slaw mix (we used 2 10oz bags of angel hair Cole slaw this time, but The mix with carrots is better) or shred your own cabbage and carrots (to make it equal to at least 6 cups full). We like a little more cabbage/carrots
1 small Yellow Onion
1Tblsp (at least) minced (calls for 4 cloves garlic minced)
4Tblsp Soy Sauce
Sesame oil
Chopped Green Onion for garnish.

In a large skillet (or a wok) cook the sausage until done (DO NOT DRAIN THE GREASE)
Add the Cole slaw mix and start mixing it around to cook it to a slightly sautéed state (you might want it just slightly crisp)
Add the soy sauce and continue cooking until you reach the way you want your slaw and carrots to be.

Spoon into bowls and add your sesame oil to taste making sure you mix it in well. Then add the diced green onions for garnish.

** Wonder how it would be over rice?

Sounds good. I think I would add some 5 spice powder and a little Korean Gochugaru.
