I need coffee! Actually not to bad but the chili I had before I came into work is setting pretty heavy. Ya know what they say, Beans Beans the musical fruit the more ya eat the more ya toot! <img src="/ubbthreads/images/graemlins/wink.gif" alt="" /> Randy you need to come out to new mexico they are picking Hatch Chilis right now. They are roasting them in parking lots all over town in front of almost every grocery store. Me and the wife are gonna pick up 20 pounds or so this weekend! <img src="/ubbthreads/images/graemlins/confused.gif" alt="" /> Explain <img src="/ubbthreads/images/graemlins/confused.gif" alt="" /> New mexico is know for a few species of chili peppers. Mostly Sandia, Big Jim, and Hatch Chiles. They are very similar to a poblano pepper but with varying heat levels. I moved here from Texas where our Mexican food uses mostly Jalepeno Peppers. But here in New Mexico. They put these Hatch Chilis in everything. On top of burgers, Steaks, there is even a place i go that uses green chili sauce on chicken fried steak instead of gravy. Growing up in the Texas I was raised on southern food (greens, red meat, potatoes) and Mexican food. When I got here it was an eye opening experience. New Mexicans will put these chilis on anything. As a matter of fact we were at a frozen custard place here in town and they had all kinds of chili toppings as a special over the last few weeks. Since the growing season is over they are picking and shipping these all over the world currently. But if you want to use them for your own self you either freeze them whole or roast them over flame or broilers and then peel them and freeze them ( they take up a lot less room this way and are a little mellower initialy), However anyone that has ever refrigerated chilis or peppers can attest that it can make them hotter over time.

Timo, I think he is talking about roasting chili peppers on a grill. A lot of folks do that and I THINK they say if you also remove the seeds they are not as hot.
Is this right Jason? Yes they have these big rotating cages with a row of gas burners on one side. in front of the grocery stores right now. (You can also do this in your oven) It does make the flavor much better. It kinda fuses the Capcasin in the seeds and the veins into the flesh of the chili giving you a different flavor. The heat (Capsacin) is contained in the seeds and veins in the ribs up the insides of the peppers which can be removed. These tyopes of chilis have a tough skin so we roast them and peel them before storing them long term because its just easier. Chipotle Chilis are a dried smoked Jalepeno. If we get some this weekend I'll try and get a video of it.

I saw Chili and immediately thought of peppers. Not the meat type Chili! Mexican food is the dominant food here. I think I'm going native. Someone help me. Get me some Mustard Greens and a Chicken Fried Steak! STAT!

I didn't really know all that about peppers. We don't use them at home for anything except we DO put a can of ro-tel in our spaghetti sauce!

I tried growing chili peppers once. I managed to get flowers but not the fruit. Somebody told me it was because of the lack of light. Some day I will succeed.

Is that chipotle chili then?!? Do you eat them right from the grill or do you use them as a spice?
Btw Randy I saved your chili recipe but I haven´t tried that out yet. Randy If your handing out Chili recipes I would love to try it. ME and my wife have yet to find one we really like.
