I agree about the finish being an impediment to effective applications....I beat on my knifes until the finish is: A) gone; B) worn smooth.

Those lines were introduced by Busse, they have corrugated flats on it. Its a series of narrow grooves, cut out below the center line, parallel to the edge, giving the blade structural strength and lightening it at the same time. It can help cut some materials and also have some materials stick to it.
