This one looks purty!

Think of it this way, a 100 years ago all kitchen knives must have been nearly black, stainless didn't really exist before 1900.

And the thing is called stain-less not proof!

Yep asi said I don't mind the color. I just have seen evidence that the yards elmax patinas easier than other companies and I wonder why

Maybe because it has not been polished? Bigger surface for reaction?

Most other Elmax knives I've seen were either polished or bead blasted/stonewashed (and those get a decent polish for the effect to show properly)...

Yeah it just has to do with the make up of the steel and finish. Like stated above its a stain less. Just has a bit less resistance to stains but better edge holding ect. My zt in Elmax got some similar spots after a night of cutting up lemons and limes.
