Think of it this way, a 100 years ago all kitchen knives must have been nearly black, stainless didn't really exist before 1900. And the thing is called stain-less not proof! Just has a bit less resistance to stains but better edge holding ect. My zt in Elmax got some similar spots after a night of cutting up lemons and limes. JYD# 165 I love hard use knives. in all steels, sizes, and shapes.
