At least once you get a dog sharp it stays like it pretty well!

On mine now I just Lansky them on 20 or 25 degrees using medium grain, I don't bother using a white ceramic rod to 'steel' them as it just seems to dull the edge(!). I find just making the last few passes with the lansky very lightly 'strops' them fine.
