I have had very good luck with Buck's 420HC. For some reason, Buck can make a knife with good sharpness and edge-holding out of 420HC. Must be their heat treat. I skinned 10 squirrels with my old Bucklite, and it would still shave.
Thats still their bread and butter steel. There one of the few that can seem to make decient knives out of it.
