Sharp is correct, It's a convex edge.

Well, to start off I used like 320 grit to thin out the edge, that took well over 100 strokes,

Then I went up to 400 then 800 then 1000 and lastly 1500,

When I was changing grits I would go 10 on one side,

Then ten on the other,

Then 10 switching sides. if that makes any sense.

That does, thanks. I've been just using 600 to touch up the edge. About 10 strokes alternating. After that it's to the strop.

It really was hell thinning out the edge by hand, 100 strokes per side I mean.

You should try it at night with very little light. It's quite soothing sharpening knives by hand. <img src="/ubbthreads/images/graemlins/laugh.gif" alt="" />

I find for actually "thinning" out the edge, using a flat stone is 3497304837498369x better!
then you can hit it one a strop to convex it.

I suck at polishing knives... but I can get a decent convex edge on them...
and I can consistelntly get them shaving sharp now! (finally)
even wiht my limited equipment. (a half of a tiny fine arkansas stone, a smiths caorse ston, some 400 grip wet and dry and my jeans. <img src="/ubbthreads/images/graemlins/laugh.gif" alt="" />)

I use a 300 grit dimond pad for thining out edges, the a soft arkansas stone or 600 grit diamond pad, then a hard arkansas stone, then a 2000 grit ciramic.
I only strop my edc's(get them to hair spliting sharp), I leave a decent working edge on the users(shaves arm hair but does split hair).
