i asked for these a couple weeks ago after my mother,who could'nt care less about knives,saw the mudder res-c on my BDLE,picked it up and said "wow,thats pretty cool,i'd like something like that for my kitchen."

problem is dan would have to do a complete set and do it all at once imo and that would be pretty difficult for him and the shop i would have to guess and even with their more than fair prices a lot of people couldnt afford a whole set of knives.

but boy,that 154CM and the mudder grips sure would rock.

also think how long people usually keep kitchen knives and how they usually treat them.you know dans got to think about that when offering a life time warranty and i dont think he's interested in releasing knives without the life-time warranty either.i wouldnt if i where him

They could just put out a nice cleaver and a pair of good Santokus, and people would buy them without hesitation. I actually find most of my kitchen work can be done with these; a good heavy cleaver, and the two Santokus, one large, and a second smaller one.

Speaking of kitchen work, we "Northern neighbors" just had our Thanksgiving weekend. My family is a days' travel away, so I just stayed in Ontario and made a nice, thick, hearty Turkey stew. It was so good I had 3 bowls, and almost had a fourth, but had no room left in my belly! LOL!

"close minded" may have been the wrong term.
Busse Combat IS INFI AFAIC.
But SY is supposed to use extra steel right?
why only stick with one when you can make GREAT knives with others?

what I'm basically saying is that I think SY should let no good steel sit and not try to use it.
I like that they are using 154cm and hope they keep using different steels.
(along with sr77)

Gee guys, it was just an idea. No need to go all INFI kool-aide paranoid cult nuts about it. Who cares? It's no big deal whether they make kitchen knives or not to me. Not my company. It may not be a good idea. It may not fit in to their business plans at all. I just thought it might be worth considering since Busse already has all that nice 154CM steel and the Res C mudder handles. Many knives can be dual purpose anyway. A good butcher knife is also a decent skinning and hunting knife. In fact, the early trade knives were pretty much the same as kitchen knives. If they made some nice kitchen knives, I'd probably buy a few, but many folks just don't care about the quality of their kitchen knives.

I think sometimes we take knives and knife companies a bit too seriously. The more this forum becomes like the Busse forum, the less I enjoy it.

I feel the same way. I don't go to the other forums I used to anymore.

I've been liking this one, though, and I hope it stays less... confrontational.

If someone doesn't feel respected, they tend to bail.

It needs to be fun, or it's not worth anyone's time.

Have you ever experienced two rednecks arguing about Fords and Chevys? It just gets pointless. I have brands of products that I prefer like anyone else. But unless I am on their payroll, that is all it is, a preference. It may be based on facts or performance or in some cases just an emotional attachment (does anyone really believe Harleys are better than Hondas?). But for most things I buy, my "loyalty" has to be earned every time I buy the product. Scrap Yard replaced some other brands I used to buy. Swamp Rat replaced some scrappers. That is the way it goes. I thought it was great when Swamp Rat and Scrap Yard came out with the nice 154CM knives. Then some bonehead broke one doing something stupid. I'd love to see more of them, because they have better stain resistance and edge holding than SR77, and for some applications that is the steel to use. Like in my kitchen, for sure. Here are some of my favorite kitchen knives. No two are even the same brand. I'd love to replace some of them with 154CM scrappers.

No, EMF, not you. Back to the topic, I just realized that I don't have one of those Japanese style chef knives, santoku or some such. Like a French chef knife, but with a straigt edge. I need one. I think. I have an idea. Show your kitchen favorites. Mine are the CS serrated (for bread), the big 1776 brand Chef knife, the custom Nessmuk for dicing, the Chicago cutlery for peeling potatoes, the Green River for cheese, and general slicing, and the Bird Dog for all-around utility. Actually, I use it for everything except bread and slicing things bigger than the 4" blade can slice. It's a killer steak knife, too.

Hi Vic....the answer to your quest lies here - http://japanesechefsknife.com/Page3.html. Made by the guy who did my favourite customs. Not cheap but not crazy either and world class in what they do.

My own use levels may only merit cheaper stock which I have...some German full kitchen set bought in nice carry cases before I knew about these knives. Even my German knives are not used much but some get used more than others.

In hind sight I would rather have two of these than a whole host of others...just because they are so cool and would probably give me more incentive to go shopping for proper food instead of convenience cooking.

Click on products and check out Hiro Itou's blades. Awesomely pretty and effective. R2 steel will enable these to be past on for a few generations.... <img src="/ubbthreads/images/graemlins/thumbup.gif" alt="" />

I think a 154CM cleaver would be cool. I would have a tough time justifying another Chef's knife at this point (I have 4 good ones) and my Shuns would be tough to knock off their perch as favorites. SY would have to put on a better initial edge though...

The Santoku knives are great. I have a Shun and a Henckel that I really like. If you are ever at a store that sells the Shun brand you should see how they feel. I like the original handled ones best.
