I feel you on that. Had to give my dad his first "nice" EDC folder. It's a customized Spyderco Tenacious, but he thinks it's the best thing ever. Probably because I had it Cerakoted Maroon and Gold to commemorate his USMC service. I'll have to get him a 711 or 911 so he can see what his USMC Ka-Bar wants to be when it grows up. wink

My dad doesn't collect knives, but he appreciates fine steel in traditional patterns
Never met a person that can sharpen a knife like he can

What's his go-to blade, if I may ask? Also, what technique does he use?

He sharpens freehand with various wet stones, followed up by stropping on a leather strope
His favorite hunting knife is one we got him for Christmas in the mid 1970's, I can't remember the name but it was a contract knife made by Schrade.
He retired his oldtimer folder a few years back and carried a Kershaw that my brother gave him.
He lost that knife before Christmas so I bought him a Ka-bar mini dozier for now
I want to get him a nice GEC or something similar for his birthday

He hates some of the larger folders I carry

probably, his old edc (oldtimer) he carried since I was a kid, my youngest daughter now owns it, the one blade looks like a toothpick now
I have an oldtimer trappers model that was my uncles, he carried it for about 15 years. When he died my aunt gave it to me.
I lost it for about a week after I carried it as an edc for about 20 years.
My oldest daughter now has it at her place in her one display case
