They're different in exactly the way you described. Moss is a textured green with black specs appearing where dimples occur; Jungle green is a homogeneous green coating as on: Busse Combat blade finishes. Jungle green is brighter than olive drab, and is a fairly smooth, non-glossy finish -- it's not a crinkle coating (see the black and muddy), but may have some texture if you look closely; I suppose it could be called flat.
