i don't. it doesn't have the zero edge and will lack a few of the ounces in the cg. the lack of a coating will give it more fluidity in the media you chop, and as far as cutting, why care? i'll always use a smaller knife for cutting, the sheer mass will not lend itself to slicing, shaving, peeling, or anything else you should be doing with a sak, mora, delica, or 110.
