...On the belt sander side of things... I have the cheapo Harbor Freight 1"x30" but I get a lot of play/movement/vibration in the belt. Is it worth it to step up to something a bit nicer if I really want to apply a nice edge to my knives?

I need a belt'sander sage to come to my aid!!!

You mean some fool who has bought several of them? You can do pretty good work on a HF 1" x 30", but using good belts is the key. It will run smoother with good belts. And the HF sanders vary a lot. My old one is smooth, but my newer one is rough. The Delta is just a bit smoother. Stay away from the Chipping Away. It is the roughest of them all. The best one I have tried so far in the the 1" belt size is the Kalamazoo. It is simple, smooth and quiet. The platen is awkward to install and remove, but overall, I like it the best so far. Smooth is important when doing a pretty convex edge. I used the new Kalamazoo 1 x 42 to do this convex edge on my new Busse.

Horned, dangerous, and off my medication.
