You are in FL so I am assuming you are salt water fishing, but then again, Florida has some nice freshwater, too. Since Busse doesn't offer any stainless models, that Spyderco Salt sounds like the one. With some care, INFI should handle it fine, but it won't be as rust resistant as the H1 steel.
This brings up a good point - I've been thinking about a fishing knife to get as well, but I do mostly freshwater, where salt corrosion isn't a concern. Still, I wonder if I'd be better off going with one of the 154CM offerings from the Swamp or the Yard. There are a couple of INFI designs I've seen that would make awesome knives for trout fishing, though...
