I never suggested in any way that SY stop making hard use knives. But they have the 154CM steel and it is excellent for holding a sharp edge. It would be oustanding for kitchen knives. If you look at the prices of some of the very fine kitchen cutlery that is made of steels inferior to 154CM you might be surprised at what they charge. The Res C mudder handles are great, too. I just thought it might be one way to use that steel.
