Most people won’t be able to tell too much difference between the 3 steels. SR-77 is really tough, but doesn’t hold an edge quite as well as SR-101. SR-101 isn’t “weak” though, it’s PLENTY tough for most people. INFI is the best all around with greatest corrosion resistance, but is usually marginal performance increase for a much higher price. It’s good for when you don’t want to worry about keeping it oiled so much, and want the best and don’t care what it costs.

Any knife that the Busse family makes will serve you well in any situation. They’re far superior to anything you’ve probably ever used. If you want a knife for food prep and not worry about rust, you might want to check out the 154 CM knives. Otherwise, you could strip the coating off a coated blade, and just keep it oiled.
