I used mu scrapmax the other day to cut up some tomatoes we were making into juice. I let it set for a while without cleaning it off and it stained the blade a little bit. Nothing objectionable, but it will happen. Tomatoes have a lot of acid in them.
Yeah, it would be a good habit to rinse all blades after using. Carbon blades also, but they should be dried very carefully before putting in sheath.
