Best trout I've ever had was fixed on a grill wrapped up in tinfoil with onions, peppers, some lime juice and of course salt and pepper.

When I was in Idaho we would go out to the Military marina on the C.J. Strike reservoir and catch striped perch. One day we caught 88 and filleted all of them. Boy they were good eating when drenched in tempura batter and deep fried.
