it keeps the deer above freezing but cold enough...to where its like you are "ageing your meat"

say if you shoot a deer & are like..."omg wth wuddaamigunnado?"....you load the deer into your truck...back up to said deer cooler

a huge bear of a man named joey grabs your 110lb doe ouuta the bed of truck w/ one hand....hangs in on the gambrel guts & skins it in about 3mins....slides it down the track into the cooler & it hangs there untill the butcher comes in on wednesday

OK, same concept here. AFTER they process the deer it's packaged and frozen there and you come get it when they call you. They usually let it hang at least a couple days.
