One of the best (or most dangerous) is the raw puffer (blow fish?) they have in Japan. To prepare it the chef has to be certified by the Government. It is Raw (but is so thin you can't tell it) and as you eat it it makes your lips and tongue start to "Tingle" or actually I guess go numb. IF they do it wrong, you're dead! It was actually very tasty and I really liked it, but It's so expensive I was only able to eat it one time, compliments of some Japanese business men.
