JJ, you can use all sorts of things to force a patina. Mustard. vinegar, onions, potatoes, tomatoes virtually anything that will cause a reaction with the metal. And I have heard that you can use Windex to neutralize it once you reach the look you want.

A paste made from baking soda works as a neutralizer too. Used it when I stripped a barrel once upon a time, soaked in vinegar and then applied the paste when I was done.
